Grateful Stuffed Peppers

Ingredients

1 lb Grateful Ground Chicken

2-3 Yellow Peppers (cut long ways and seeded)

1 8oz can of Tomato Sauce

1 package of frozen Trader Joes Rice

1 package Mexican Blend Cheese

 

Cooking Instructions

  1. Pre-Cook Peppers - Pre heat oven to 350 F.
    1. Add 1-2 inches of water to large baking dish.
    2. Place peppers cut side down and cook for 15-20 minutes, until peppers are just soft.
  2. Saute Grateful Ground Chicken until cooked through (approx 10 mins)
  3. Add Tomato Sauce
  4. Add Trader Joes frozen rice, cheese and mix well.
  5. When peppers are ready, remove from oven.
  6. Portion the filling into each pepper, top with cheese and return to oven for an additional 15-20 or until cheese has browned and is bubbling.

Grateful Chicken Tacos

Ingredients

Taco
1 Grateful Chicken Burger
6" Taco Shell (soft)
Avocado
Pico De Gallo
Red Cabbage
Garnish
Lime
Bean Sprouts
Cilantro

Cooking Instructions

  1. Cook Grateful Chicken Burger
    1. Using a seasoned grill or skillet cook burger flipping periodically until internal temp reaches 165 degrees. Set aside.
  2. Prepare your taco ingredients.
    1. Two 6"soft taco shells.
    2. Salsa (we prefer spicy), chop cilantro, slice lime, wash bean sprouts and red cabbage.
  3. Cut burger in half. Place each half in soft shell taco.
  4. Top tacos with desired ingredients and garnish.

Grateful Pasta and Meatballs

Ingredients

Grateful Chicken/Beef Meatballs

1 lb of favorite pasta

1 Jar of favorite pasta sauce

Parmesan cheese

AIR FRYER RECIPE!

Cooking Instructions

  1. Cook Grateful Meatballs using Air Fryer
    1. Set Air Fryer to Roast - 375 F
    2. Cook for 6 mins - toss meatballs - cook for 6 additional minutes.
    3. Let sit for 3-5 minutes (meatballs will continue to cook!)
  2. Prepare pasta and sauce.
  3. Combine Meatballs with sauce and serve over pasta with Parmesan cheese!

Tortellinni Grateful Meatball Soup

Ingredients

1 Bag of Chicken Meatballs
1 Onion
2 Large carrot chopped
4 Stalks of celery chopped
2 Cloves of garlic
1 Tbs tomato paste
1 Handful kale
4 Cups of chicken broth
1 Package of frozen tortellini
1 TBSP italian seasoning
1 TSP red pepper flakes
Salt & Pepper to taste

Cooking Instructions

1. Sauté chopped onion, carrot, celery, and garlic in some olive oil until tender.
2. Add 2 tbs tomato paste and sauté for a few minutes.
3. Add chopped and de-stemmed kale.
4. Season with salt, pepper, red pepper flakes, and Italian seasoning.
5. Pour in 4 cups chicken broth and bring to a simmer.
6. Add Grateful Chicken Meatballs. Boil for about 5-7 minutes until the meatballs are cooked through.

7. Add a package of store bought tortellini to the soup and boil until tortellini are cooked.
8. Serve in a big bowl with an optional sprinkling of Parmesan and a chunk of crusty bread!

Grateful Chicken Salad Bowl

Ingredients

1-2 Grateful Chicken Burger

1 Bag Mixed Greens

3oz Bacon

3oz Broccoli

3oz Brussel Sprouts

1 Avocado

Hot Sauce of your choice!

Cooking Instructions

  1. Cook Grateful Burgers on skillet, or grill. Coat cooking surface cooking spray. Cook burger until internal temp reaches 165 degrees. Flipping burgers every 5 mins or so.
  2. Cook bacon in skillet, set aside. Leave some bacon grease in skillet.
  3. Add Brussel sprouts to skillet and cook until brown and crispy.
  4. Saute or steam broccoli.
  5. Prepare avocado and mixed greens.
  6. Combine in a bowl and toss with favorite hot sauce or salad dressing.

Ingredients

Sauce
1 lb Grateful Grass Fed Ground Beef
1/2 Yellow Onion
1 Clove Garlic
1 Jar of your favorite tomato sauce
Garnish
Basil
Parmesan Cheese

Cooking Instructions

  1. Add onions & garlic, sauté for 5 mins.
  2. Add Grateful Grass Fed Ground Beef, sauté 10mins until cooked through.
  3. Add tomato sauce.
  4. Serve over favorite pasta & enjoy!

Grateful holiday Stuffing

Ingredients

2 Grateful Chicken Burgers
1 Tablespoon Olive Oil
1 Medium Onion - Diced
2 Stalks Celery - Diced
1 3/4 Cups of Chicken Broth
6 Cups of Pepperidge Farms   stuffing mix
Salt & Pepper to taste

Cooking Instructions

  1. Heat oil in skillet. Add Grateful Burgers and mash them up once they are starting to thaw. Cook until browned.
  2. Add Onion and Celery and cook until soft.
  3. Add in Chicken broth and bring to a boil. Let simmer for a min.
  4. Add Pepper Farms Stuffing Mix.
  5. Mix lightly and serve!

Grateful Meatball Bites

Grateful Burger Bites

Ingredients

12 Grass Fed Beef Meatballs
6 Grape Tomatos , halved
2-3 large leaves green lettuce
  -(torn into 12 pieces)
12 dill pickles "chips", patted dry
Decorative toothpicks

Cooking Instructions

  1. Coat a medium skillet or grill pan with cooking spray. Over medium heat, cook the meatballs for approx 4 mins per side until cooked through. Set aside.

  2. Layer each meatball on a pickle slice. Top with cheese, then lettuce, then tomato half. Secure each stack with a toothpick. Repeat.
  3. Serve immediately with your favorite dipping sauce or ketchup.
